Breakfast at the Golden hour

I am one who loves breakfast but am just a little lazy getting up early to make them. So once in a while, when I had enough beauty sleep and have the energy to get up and rule the day, breakfast would be certainly on the menu. Usually I would use the ingredients that I have on hand, but on certain days I would go grocery shopping for it.

My ideal breakfast would be toast (I love toast!) and coffee. At home, I love to make my toast a fancier. I would add avocado, bacon and cherry tomatoes and go along with a cuppa. Most of my breakfast are kept relatively simple as no one likes a mess or a dish that takes forever to prepare. Previously I made mashed avocado, season with salt, pepper and lemon, and toast with poached egg and it is still one of my favourite food to have as it is simple yet so delicious. Thus this time I decided to change things up a little and add more colours to the plate.

Hence today’s dish would be avocado on toast, served with cherry tomatoes and feta cheese, with balsamic vinegar. Everything could be eaten raw and each ingredient brings so much flavour to the dish, with nutrients and wholesome goodness. A toast would set you good till lunchtime.


The base for the dish would be toast. Any loaf bread of your choice, mine was wholemeal bread, toasted. Wholemeal gives you so much fiber which fills you up for a longer period of time. Next we have avocado. A disclaimer, I am awful at picking avocado thus my avocado for this dish was rather unripe, it was tough to mash but smooth to slice. Hence I sliced the avocado instead of mashing it. I laid the slices of avocado on the toast. On top of the bed of avocado would be the cherry tomatoes. I do not prefer eating raw tomatoes, therefore I dressed the tomatoes in olive oil, mint and seasoned with salt and pepper. Lastly I added feta cheese to give the dish a little savouriness and creaminess. I drizzled some balsamic vinegar and olive oil to bind them altogether.

It may seem like a very heavy breakfast, but you would be filled, at least till lunchtime. This dish gives so much flavour and bright colours, it would just instantly wake you up for the day. There are tomatoes to hydrate you, carbs to fill you up and cheese to give you a tad bit of calcium.


Avocado on Toast, with cherry tomatoes.


  • Half avocado (Ripe or slightly unripe)
  • A slice of toast (Bread of your choice)
  • 4-5 cherry tomatoes, washed and halved
  • Blocks of feta cheese
  • Mint leaves
  • Olive oil
  • Salt and pepper to season
  • Balsamic Vinegar


  1. Toss a drizzle of olive oil into a bowl of cherry tomatoes, add bruised mint leaves. Season with salt and pepper
  2. If you have ripe avocado, mash them and season it with salt and pepper. If they are slightly unripe, slice them thinly
  3. Spread avocado on toast. Sprinkle salt and pepper and drizzle a dash of olive oil.
  4. Add tomatoes on top of avocado
  5. Sprinkle crumbled feta cheese over toast. Lastly drizzle balsamic vinegar over toast, season with salt and pepper
