The Colours of Christmas on a plate! {Day 1 of 12 Days of Christmas}

Christmas is round the corner and I cannot be more excited. It is my favourite time of year, with chilly weather and good food! Talking about good food, I am here to share with you a quick and simple recipe that could feed one or a group of famished people!

As the title says it all, there would be green, red and white on the plate, which makes this recipe absolutely suitable for Christmas! You do not need any fancy equipment or extravagant kitchen tools to make this. This recipe could be a simple lunch for yourself or a starter on the Christmas table.

All you need are an oven, a baking tray, a mixing bowl and your hands! That is pretty much it! So without further ado, THE RECIPE!

{Roasted Cherry tomatoes with Feta cheese salad}

Ingredients:

  • Cherry tomatoes (Amount depends on the amount of people you are serving)
  • Rockets
  • Feta Cheese
  • Garlic (optional)
  • Salt and Pepper
  • Olive oil and Balsamic vinegar
  • Herbs (Oregano, parsley, rosemary; any herb of your choice)

The ingredients are minimal therefore an easy dish to make!

Directions:

  1. On a baking tray, line garlic and cherry tomatoes flatly so that seasoning are distributed evenly. Season with herbs and salt, drizzle olive oil till all tomatoes are coated. Bake at 180 degree C for about 15 mins.
  2. Mix olive oil and balsamic vinegar to make balsamic vinaigrette.
  3.  Once tomatoes are out of the oven, toss it into the mixing bowl with rocket leaves and pour the balsamic vinaigrette into the bowl.
  4. Toss with your hands, taste and season along the way.
  5. Just before serving, sprinkle crumbled feta cheese on top of the salad on the serving dish.
  6. AND SERVE!

It is a simple and healthy dish to have for the festive season with bright colours and burst of flavours. It goes well with all the hearty meat on the table and adds a little green on your plate. 🙂 IMG_8704
